Basil Pesto Pasta with Sun-dried Tomatoes

Time: 15 minutes

Ingredients:

Cooked pasta (your choice, but penne or spaghetti works great)

Fresh basil leaves (2 cups)

Pine nuts (1/4 cup)

Grated Parmesan cheese (1/2 cup)

Olive oil (1/2 cup)

Sun-dried tomatoes (1/2 cup)

Salt & pepper to taste

Garlic cloves (2)

Instructions:

Blend basil, pine nuts, garlic, and Parmesan cheese in a blender while slowly pouring olive oil until smooth.

Mix the pesto with cooked pasta.

Stir in sun-dried tomatoes.

Season with salt and pepper.


Spicy Shrimp Tacos with Cabbage Slaw

Time: 20 minutes

Ingredients:

Large shrimp (peeled and deveined, 1 pound)

Olive oil (2 tbsp)

Taco seasoning (2 tbsp)

Corn tortillas (8)

Lime (2)

Cabbage (shredded, 1 cup)

Red onion (thinly sliced, 1/4 cup)

Cilantro (chopped, 1/4 cup)

Yogurt or sour cream (1/2 cup)

Hot sauce (to taste)

Instructions:

Marinate shrimp in olive oil and taco seasoning for 5 minutes.

Sauté shrimp in a hot pan until pink.

Mix cabbage, onion, cilantro, lime juice, yogurt, and hot sauce in a bowl.

Serve shrimp in tortillas topped with cabbage slaw.


Mediterranean Chickpea Salad

Time: 10 minutes

Ingredients:

Chickpeas (canned, rinsed, and drained 1 can)

Cherry tomatoes (halved, 1 cup)

Cucumber (diced, 1)

Red onion (chopped, 1/4 cup)

Feta cheese (crumbled, 1/2 cup)

Olive oil (1/4 cup)

Lemon (1)

Dried oregano (1 tsp)

Salt & pepper to taste.


Instructions:

Mix chickpeas, tomatoes, cucumber, red onion, and feta cheese in a large bowl.

In a separate bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper.

Toss the salad with the dressing.
